Tres Leches Cake ... Three Milks... Sounds Healthy and Good for You, doesn't it?
We had dinner guests last night and I decided to prepare a complete Mexican meal... Dia de los Muertos is coming up on the day after our Halloween, so it seemed to fit...
Typically I might hedge on the dessert, but I saw the recipe I'd heard of for years and decided to make it... At every turn I could see *Danger* ahead! In making the cake, it required 7 (seven!) eggs... And when it came out of the oven, I pierced it and poured a 4C mixture of Sweetened Condensed milk, Evaporated milk and Whipping cream over it. In that moment I had to put all Trust in the recipe as it went against everything I know about baking cakes, pouring liquid all over it!
By the morning, it looked pretty good, but then I had to make the meringue frosting... 6 more egg whites, sugar and corn syrup with some Freshly-Squeezed Lemon Juice (to make it appear healthy, I suppose!)
Well, let me tell you it tasted sensational (and I lean toward liking chocolate desserts best!) However, the last thing we need around here is something that highly caloric, so I brought squares of it to three neighbours (and one other neighbour came to dinner with us!) I sent squares home with both dinner guests, had another piece for breakfast (eggs, milk and juice..that's breakfast, right?) and we still have some left over! I can think of a few more people with whom to share it and then it's out of here...but oh! the tasty memory! Sabroso!
OMG that sounds heavenly!! I am sure everyone loved it!! My goodness all those eggs!! I think the lemon juice definitely made it healthy!! LOL!!
I am laughing as I have just "made" my meringues as per your recipe. Using a hand whisk made it slightly more difficult but I managed. The problem came when I started to use the icing bag to put them on the tray!! I think you could say it was out of control!! My sister was laughing giving me instructions!! They definitely do not look like yours!! LOL!! Lets see what they taste like. I did notice the sugar was more grainy than yours when I was licking the spoon - perhaps you didn't use granulated sugar? If they look ok I will take a photo as evidence of my first attempt at meringues!! Such fun!! What shall I try next?
@pamknowler What fun to share our baking stories!!! Lovely to entertain you sister in this fashion (Not haha!!!) The reason your meringue was garnier was that you have to infuse the (granulated, yes) sugar very slowly and keep beating. Certainly the hand mixer is not the powerhouse that the Kitchen Aid is. Even for my cake topping, it required beating it atop a double boiler for 2 7-minute intervals, but it was't holding the stiff peaks it promised. I knew the egg whites were cooked anout, so I put it all in the mixer bowl and whipped it mightily...and it came out great (albeit a stom was raging outside and it was definitely not a meringue-making day!!) "Grainy" shouldn't have hurt your meringues, but there's the reason why it happened. Let me know how they tasted! (You can always polish off your mistakes and try again!)
@quietpurplehaze I'm actually very sorry I can't pass a piece over to you! Ken came in a few minutes ago and said he thought that, like fruit cake, it was improving with age as it soaked in that liquid! I'll make it again sometime when I know there'll be a lot of people around to enjoy it! (Serves 16...and I know why!)
It sounds absolutely delicious but I would think rather rich as well. I sometimes make a baked pudding that has a liquid poured over it, allowed to stand for at least 30 minutes before reheating. It does also taste much better 24 to 48 hours after having the sauce poured over it.
Sometimes I`m sorry I do n`t like the taste of sweet . An the other side: is n`t it a pityy to eat this beautiful piece of art? I can watch it for hours. Even the sauser is beautiful.
Sounds like all your calorie allowance in one meal! However its good to be able to share it like you did and then there will be no temptation to nibble on it all day!
anything with condensed milk is aces with me! but reading the recipe, my arteries and capillaries are constricting and i could hear the cholesterol bell hitting the roof. god, that cake sounded delicious! :-D
OOOOOOooooOOOOOOH my god Louise this looks and sounds AMAZING!!! First of all I have a thing for sweetened condensed milk - one of two things I don't buy because I would literally eat it with a spoon until it's gone... the other being Nutella... Good for you for finally making something you've wanted to make for years! So glad it turned out as amazing as you'd thought :)
