This is a light fruit cake eaten during the pre=Easter period in the UK , Ireland and some other countries . It is distinguished by two layers of almond paste or marzipan , one baked in the middle of the cake and the other placed on top of the cake after baking , and decorated with a circle of 11 balls or eggs made from the marzipan . Conventionally y the 11 balls represent the 12 disciples of Jesus ,minus Judas Iscariot who had betrayed Jesus . The top of the cake is then browned under the grill ( or in my case blow-torched ) It was originally made for the fourth Sunday in Lent - although in most recent times it is eaten throughout the pre-Easter period and even on Easter Sunday .
Mine I made at the beginning of the week and managed to marzipan the top of the cake today
Thank you all for your good wishes yesterday - I do feel better today - but some way to go before being reasonably pain free - as they say- I keep taking the pills !
