There’s a story to these biscuits. A lovely lady called Pauline was a client of my partner Pete’s. Sadly, she recently passed away from COVID-19. She was famous for her home made ginger biscuits & she would make them whenever she expected visitors. At her funeral her grandchildren made boxes of her biscuits to give out to the congregation along with the recipe. My 12 year old daughter made these today, keeping Pauline’s biscuits alive for another generation. They taste amazing!
What a lovely thing to do! I love ginger biscuits but the other half doesn’t (it’s about the only thing I can think of he doesn’t like) so I tend not to make them but these are v tempting!
