When I was a kid we used to get pizza at a place called Shakey's. In addition to great pizza, they were famous for Mojo potatoes. Here's my attempt to recreate the magic as one of my Super Bowl snacks. Tasty and pretty close to my memory of this delicious side dish. Not particularly pretty, but very tasty!
When I saw "mojos" I was immediately taken back to junior high when we would all go to Shakey's after school dances. Everyone's favorite were the mojos. Thanks...I'm now craving them!
