Shouldn't do. I keep uv's on more as lens protection than anything alse. Of course there are quality issues with everything but uv's are pretty harmless.
A good UV filter shouldnt effect the sharpness, but some cheap filters might, or even a badly manufactured expensive one. Making sure they are as clean as a whistle is important and also make sure they are on correctly can help with the focus problem :-)
To make sure its not you, or the lenses/camera settings, try putting camera on a tripod and shooting with and without the filters, see if its deffo at fault as it seems a bit odd that every filter is the same.
