Fancy lunch

The results of my foray into a bit of baking this morning.
We had three of these each with a side salad & cheesy garlic bread plus a G&T each followed by strawberries, raspberries & blueberries.

I wish I had put them on a plate properly before I took the photo….would have been a bit more elegant!

Cathy took the remaking two home for her lunch tomorrow at work.

Filo pastry here is so good with nice fillings - crispy and not too fatty! Nice to see them straight out of the oven!

@jgpittenger Just give you a quick recipe Jane.

Mini Quiches with salmon & courgettes

Sheets of filo pastry cut into squares. Coat the bun trays with oil & stack three squares of pastry on top of each other like a star. Brush with melted butter.
Grate courgette & place a teaspoonful in each tartlet.
A basil leaf on top of the courgette & add the smoked salmon flakes on the top.
Beat three eggs & add 200mls of Creme freche. Beat until well incorporated then add 100 mil of milk. Season well.
I was very lax with these amounts as I didn’t make as many as in the recipe…..theirs made twelve.
Pour the egg mixture into the pastry cases until it reaches the rim.
Place on a hot baking tray in the middle of the oven…18 to 20 mins until the egg mixture is a little puffed up & filo pastry sheets golden brown but not burnt!! 200C fan or 180C gas.
Enjoy. I was surprised how quick they were to make! Frozen filo pastry of course!,

@judithg Yes everything is new Judith….old stuff doesn’t cut the mustard plus it had gone a little rusty in storage.
