Lunch and dinner

Whenever my hubby is gone, I eat seafood. I broiled a bunch of swai fish earlier this week. Put some almonds on it when I heated it up. Very yummy. Used my veggies from my co-op delivery to make my side dish - sautéed eggplant, bell peppers, onions, garlic, squash and tomatoes together with a little kale and some spices. I could eat this stuff all day. Too bad I didn't have any mushroom and green tomatoes to add to it.
