Thick/thin - good/bad?

I do not know anything about buying a fish and my husband doesn't either.
I'm not a big fish eater, but as varied diet is healthy, we went to the fish market this morning. My plan was to take a picture of the fish we bought, so that if we like it we can buy the same type again.

The people at the fish market do not speak a lot of English, just the numbers to communicate the price. I planned to take a photo just of the fish but this man was very happy to take his face-mask down and pose...

Not the best photo as it all happened so fast...

@dutchothotmailcom That is very easy! In the back of the fish market are cleaning stations. Every seller has at least 1 'cutter' (a person earning a little money by cleaning the fish), so when you have chosen your fish, the plastic bag with the fish will be handed to another person. He will ask how you want it cut, gives you the number of his station and runs off. We wanted filet, but you can have it whatever way you want. With or without skin, with or without head etc. Of course you could take the whole fish home yourself.
Thinking about that, I should take pictures of the stations too :)
