I decided to bake bread. But there is NO all-purpose/baking/wheat flour to purchase, anywhere, so I resorted to some rice flour, xanthan gum, dry milk and all those things my husband bought to bake gluten-free bread. But the ingredients were old, and the bread was yucky. But the squirrel didn't mind and I bartered bread in exchange for cooperative posing.
@jyokota You need flour :( Like I mentioned in the roll call post, try buying flour from a bakery or a restaurant supply store.
That is absolutely adorable seeing that squirrel eating your home made bread though.
Maybe until you can get some flour, you could bake some brownies? You could use rice flour in those. Trying to make bread without gluten is tricky and usually disappointing.
Being mostly a cake and pastry baker, I do tend to favor the more rich breads. How about a challah? I've never used a bread machine. Do you need a recipe with just a list of ingredients, or should I write a method to go along with it?
@stephomy -- I put in the liquids and then the dry and then the yeast so I think I don't need directions unless I have to take out the dough and braid it and bake it in the oven
Very collaborative! I think I’m baking bread one of the next days. Just bought a stone slab to put in the oven to evenly spread the heat... You need real flour and very little yeast though, gluten free mixtures are not the same.
If you want to braid it, you can, but otherwise you could just let the bread maching do its thing and end up with a loaf. I'll try to convert a small enough recipe for one loaf.
The ingredients are:
3/4 cups of water
3/4 cups of milk
2 eggs
1/2 cups of vegetable oil
1 1/2 tablespoons of dry yeast
1 cup of sugar
3/4 tablespoons of salt
5 1/2 cups of all purpose flour
Once the dough is formed, you can either leave it in the machine or take it out and form it. I let it rise to double the size, then braid it. After that I let it rise for some more time. Longer if it's a cold day. If I feel like it, I'll brush it with an egg wash to give it a shiny look. It gets baked in a 375F oven for about 25 minutes.
