I always visit the Bellagio Conservatory when in Las Vegas. In February it is always decorated for the Chinese New Year. What they do with flowers is amazing. Going early in the morning 7am will give you to best chance of getting photos without tourists, although there may be workers changing out some of the flowers in the displays.
