Being a sick person in the bedroom and with such a sore throat I can’t talk, I was trying to find a way to contact John in the next room without talking! I tried, Skype, FaceTime, Messages, Email. FaceTime actually brought up our two faces so I was able to beckon him to me! He doesn’t check email or FB or anything really so its difficult!
This photo was taken from the window in the late afternoon - just to keep up with the photo a day.
Three good things:
1, I’m thinking about throwing 3 good things out the window after an awful night and day with the flu.
I managed to get a nice smoothie for lunch made by 2. John but was a bit unnerved by his choice of a smoothie for himself - one raw egg, beetroot, cole slaw and tomato! Crikey - he called it ‘interesting”!
3. Hoping to find a good site for looking at what to plan for a stepdaughter coming to stay who doesn’t eat gluten, meat or any egg, even traces of egg! Not even wine that has been processed using egg products! Help! John’s idea is to serve the usual and let her choose! But she will starve - not practical!
So sorry to hear of you suffering with the flue but your description of the day made me have a big grin on my face !! I thought either Maggiemae was fed-up of not feeling well or maybe delirious with a temperature !! :-) Hang on and another day in bed with a hot toddy !!
I hope you'll get your head round some recipes suitable for your stepdaughter ! -- it really puts you out of your comfort zone doesn't it !!
You are doing amazingly well with your photos from your sickbed! And FaceTime was a clever way to summon John!
Will your stepdaughter eat dairy? I have a great macaroon cookie recipe that is gluten free -- let me know if you want me to send it to you.
NOTE: I always double the recipe so that it uses a full package of the large bag of coconut and about 2/3 of the can of sweetened condensed milk.
Recipe for ‘normal’ amount, not doubled, follows.
Mix together:
1/3 cup unbleached flour (I substitute almond flour now)
2 1/2 cups shredded coconut (basically half of one large package)
1/8 tsp salt (have been leaving this out
Then mix in 2/3 cup sweetened condensed milk (I use low-fat or nonfat — and, I don’t put in the full amount, I just add until it’s mixed well enough to hold together)
1 tsp vanilla extract (or a little more)
2 oz bittersweet chocolate, grated, or about 1/2 cup of mini-chips (or however much you like — I use more than 1/2 cup probably, and also add chopped walnuts and think the mini-chips work the best)
Preheat oven to 350 degrees. Use parchment paper on cookie sheet (can grease sheet well, but with almond flour, they don’t hold together until cooled, so parchment works much much better).
Drop batter by tbsps to 1/4 cup (depending on the size you want to make them, onto the cookie sheet. Allow an inch of space between cookies. Bake for 20 minutes, or until golden brown. Remove and cool - especially important for the almond flour version…let cool a bit on the parchment, more than you would normally. Then, I slide off the parchment paper with the cookies onto the counter and let them cool that way until I can handle them and put them in storage or serving platter.
A beautiful rose. sorry to hear you're sick. a sore throat isn't very pleasant. I have one mostly everyday. the tiniest bit of a wind, draft, air condition and I've a sore throat. what helps me is unprocessed raw honey. it'll sooth the throat.
i can see a couple of thorns but i'm guessing they're soft and unthreatening. lovely rose and there are more buds coming forth!
sorry to hear you're unwell and hoping you get better pronto. sometimes i like it when i have a sore throat, i try to sing jazzy songs and it sounds good, until i croak like a frog then i laugh the heck out until my voice disappears again. fun way to be sick, you know. :-)
Well sorry to hear you are not feeling well, that stinks. The drinks sound interesting for sure. The step-daughter, wow, that is quite the limiting menu to choose from
@digitalrn Thank you Rick - I don't want to be like this - waste of valuable time but am forced to in order to get better! Has chocolate got egg in it, do you know?
Sorry you are under the weather and whispering, but I am glad that 3 good things was not jettisoned! Lovely evening light on the rose, here. My father-in-law used to use a bell to summon us after throat surgery. Good luck with the cooking thing. @taffy's recipe sounds delicious!
It is ironic that in these days of non stop communication you couldn't summon John. Hope you get well soon.....and I love that Taffy has been able to help you with a recipe!
I go hope thstvyojcatextecovering. If I can't get my OH i phone him on his mobile! Thinking of borrowing a baby alarm at the moment as cant hear son sleeping downstairs at night since leg in plaster. I reckon your man was just using up left overs and not encouraging you to hand over cooking when you recover! The cookie recipe will be used today here are great for son and I to go & we love macaroons! I do think if people are do restricted in their duet they should give an idea of what they can eat. Lovely light on your rose by the way.
So sorry to read that you are so poorly! Manuka honey and lemon are my sore throat remedy and pareacetamol! I have a friend who seems to be allergic to everything so when she comes to stay she sends a list of what she can eat. She also brings with her some food she is able to eat. It does help when you are entertaining someone with such a difficult diet. I like the sound of Taffy's recipe! Hope you feel better soon. You need a,bell to summon John! Lol!
@callymazoo My present difficulty is that I can't talk! Have type and its a 'message' or email. FaceTime - you have to talk!. John was using leftovers, Cally!
@pamknowler I normally have Manuka honey but not at the moment. I think honey would be good but I feel it would hurt my throat at the moment as well as lemon.
Oh dear, I do hope you are back on form soon! I tried a warm salmon and quinoa salad on my men recently. Surprisingly, they enjoyed it. I found the recipe in the May issue of the Healthy Food Guide magazine. You'd just have to forgo the boiled eggs for your step daughter. Good luck.
@pitasmum Hey that sounds wonderful, Keri! Perfect if we can have the eggs but she doesn't. I'd have to put them on a separate plate though - she is very particular!
Nice pic. Hope you are feeling better soon. I have a few food restrictions and always take food with me and don't expect others to cater for my needs. Fresh whole foods are probably best. @pitasmum has some great recipes and I really appreciate her efforts. Best option though is a pot luck dinner, that way I know for sure there will be some food I can eat. Good luck.
So sorry that you have to stay indoors because of the flu. Hope it will pass quickly. I have a step nephew who us gluten allergic but I don't even know where our kitchen is let alone of recipes. Beautiful capture and lighting.
This is a beautiful shot Maggie. So sorry you're ill.If she's ill my neighbour keeps a walking stick by her bed and bangs it on the floor until her husband appears!! I'm not sure I quite like the idea of his smoothie though:-)
I love the gloominess of this shot, unusual for a beautiful flower picture. Seems quite in line with your mood though. good luck on the feeding. Hot oatmeal with milk and honey is always good (and might suit her)
Beautiful rose.. Hope you feel better soon. I'm vegetarian and use Quorn products. I even serve them to my non veggie friends and I in something like cottage pie they don't know the difference. I also bake normal cakes etc. Using gluten free flour and they taste good. I just add a ts of xanthan gum to the cake mixture Hope this helps
@eyesmile Thanks Gena! He does hear my whistle but I need the sort of communication where I don't have to talk! Skype is the best so far but he has to have Skype turned on on his computer!
I say feed the stepdaughter John's smoothie minus the egg of course! Good luck with that! I have found that a little bell works best when summoning someone to the sick room but I see someone has already recommended that! I certainly hope you get to feeling better soon!
Oh dear I am way out of touch maggiemae.....didn't see you had bee ill, do hope you are getting over your sore throat & flu, nothing worse!
I am having trouble keeping up with the commenting with the family here! It's full on here...not sure I will be able to keep up with all the young ones here for six whole weeks!
I cannot believe it has been so long since I commented on your photos (our timing must be really off!), and I did not even know that you had been so sick.....I am glad you were managing to post despite feeling so lousy, and I certainly hope you are much better by now!! As for stepdaughter, I hope you are all stocked up with veggies and fruit!!
