Anticipating A Feast....._DSC8415

of Jerusalem artichokes - for Rainbow2018
My Jerusalem artichokes are just starting to flower and I'm hoping for another good crop of tubers. I love them roasted slowly until they start to caramelise, then drizzled with a balsamic reduction.
That looks and sounds divine Merrelyn! I have eaten them but never seen them flower.

Your recipe for cooking the artichokes sounds delicious. Have never seen a flower from this plant before. I think it looks a lot like a sunflower.

@littleconnie Thanks Connie, they are related to sunflowers and in some parts of the world they’re also known as sun chokes.
