In sweet, spiced Madeira wine poached pears with rose-honey,... will be served with mascarpone (or vanilla icecream). A virtue of simplicity, but awefully good. Shame on me, I missed the focal point on the running honey. Noticed it only, when the pears have been peeled and gone in the wine-bath. :-(
@francoise Interesting questio Françoise. I would think: yes. Probably they had no Madeire wine handy, but for sure spiced red wine or met, hazelnuts, honey, and pears. Mascarpone would have been replaced by cream or double cream,... but vanilla was probably not available. (Oh I just checked in the food timeline, they say 16th century it was know in Europe). So I think you can say that the bourgeoisie had such desserts too. And yes, this is a very old fashioned and outmoded dessert.
