Thank you all for your comments on my beets. I roasted them with a little olive oil, salt and pepper. We ate some of them with soft goat cheese and I also made a quinoa beet salad. Tomorrow I'm going to add some to a chocolate cake. The rest are in the freezer to be consumed at a later date. Cause there is only some many beets you can eat in one week. :)
