Salmon and broccoli fishcake

Not much time for a shot today, so I've had to rely on tonight's dinner (!), homemade salmon and broccoli fishcakes, the shot taken quickly under fluorescent light...

I looked up the history of salmon. One interesting discovery was that salmon was so widely available in the early days of the European settlement of the US that settlers quickly tired of it. Indentured servants were known to have special clauses in their contracts limiting the service of salmon as a main meal to once per week. Imagine that!

My Canadian friend tells me when she was growing up, salmon was the main fish and very cheap. So fish and chips for her was always salmon and chips!

Looking tasty there Peter. Fishcakes are something I keep meaning to make but never seem to get around to it. My father fished for salmon in the Severn so we used to eat it often when I was a child.
