And for tonight...

a warm maftool salad with za'atar roast chicken. More from my Christmas gift cook book - Zaitoun, from Yasmin Khan. This is a warm maftool (giant couscous) salad with green beans and rocket, served with a za'atar and lemon roasted chicken joint. I have to say, this cook book has quickly become one of my favourites of all time.
It looks wonderful Pad, what is za’atar?

@jacqbb Thanks Jacq. Za'atar is a mix of (usually) thyme, toasted sesame seeds and salt. I'd never come across it previously until I got this cook book at Christmas. It's widely available, although I think the stuff I buy from our local supermarket is a bit bland and I should really make my own! 😀
