At the start of each week when I write out the meals, I plan in two fish dishes and a vegetable one as well as all the carnivorous stuff.

Fennel bake: fennel, red onions, red chilli, garlic cloves, root ginger, spring onions, olive oil, toasted sesame oil, lime juice, light soy sauce, pastis (optional)....
This looks so appetizing! I do love vegetables and the lovely combination of flavours you can make.

It's just an aniseed flavoured spirit which enhances the taste of the fennel. My husband likes it v occasionally before dinner diluted with water. I think it smells horrible!

I like drinking fennel tea but can't stand the smell of it! There are definitely some things that taste better than they smell!

Your fennel bake looks lovey Hazel I always have to run my hand through the fennel in my garden as it reminds me of holidays in Greece and the taste of Ouzo.

Boil the fennel and onions for 1Omins, spread in ovenproof dish, prepare, chop & scatter over chilli, ginger, garlic, pour over other ingrediemts, cover with foil & bake approx one hour on low oven. Enjoy!

It looks lovely Hazel but the most impressive thing here is that you actually plan your meals at the beginning of the week! I sometimes don't know an hour before what I'm going to cook!

Pat, I should have a fit! In truth this is part of my self-management plan for bipolar to have an ordered and quiet life as far as possible. It also helps in making the shopping list for the supermarket!
