parsnip soup

I thought the peelings looked too nice to just bin in the indoor compost.

And then I felt I needed to take a shot of the soup.

3 small parsnips, 1 small red onion, 1 small potato, 1 x1-inch knob of fresh root ginger
2 tbsps olive oil
s&p
1& 1/4 pint veg stock ( with stock cube)

It was good - made enough for three.

Oh, yum -- I LOVE parsnips cooked in any way. My soup story from yesterday: I smoked the house up so much the fire department showed up at my front door after midnight! Sigh. I should not try to cook. But your soup looks delicious!

Apple would be good and I intended to put spice in and then remembered the root ginger in the fridge.

Parsnips disappeared from Polish cuisine for many years. Parsnips and rutabaga were associated with hard, war years. Now, however, it is back on our tables.
