Special events. Special days. Special dinners.

Christmas Eve. The best day of the year according to at least one of our daughters. Since 1990, always spent at “Uncle” Raymond’s; since 1991, always spent at “Uncle” Raymond & “Aunt” Jeanne’s. We decorate the Wacker tree and Raymond cooks.

This year saw the engagement of our older daughter — http://365project.org/rhoing/365/2012-11-24 — so Raymond pulled out all the stops. This year’s fine dining menu.

» “Attitude adjustment”: “Professional” (en croissant)
» Soup: Lobster bisque
» Salad: Arugula with a sherry vinaigrette dressing
» Palate cleanser: Apple-lemon-Calvados sorbet (home-made)
» Wine: Beaulieu Vineyard Georges de Latour Private Reserve Cabernet Sauvignon 2004
» Entrée: Beef tenderloin with a flambéd cherry sauce
» Vegetable: Potatoes au gratin
» Dessert: Crêpes Suzette (a well-known “food on fire” dish!)
» Digestif: Anno Domini 2007. The finest American brandy, distilled by Germain-Robin in California, and comparing favorably to some of the finest cognacs…
