Enchiladas

Clare discovered a homemade enchilada sauce and we've made them a few times now. I assist with "assembly," but tonight I didn't even get to eat. She made them for a couple friends who came over while I went to a Chamber of Commerce dinner to represent the downtown theater, on which board of directors I serve. We received an award for "keeping the arts in business."

There were leftover enchiladas, so I *will* get some. :)

I love seeing regional differences! Here, these would be either burritos or soft tacos as enchiladas are made with corn tortillas. No matter the name--delicious!

@janeandcharlie Aha! The recipe probably was with corn tortillas and we used regular flour tortillas and didn't adjust the name of the dish correspondingly. Happy to have a correction, Jane; thanks!
