“Mangoes & cheese”

Part of Easter dinner — these stuffed peppers are a family tradition on Clare's mom's side of the family and her brother & his wife joined us for dinner today. While we did have ham, it's all about the stuffed peppers with this part of the family.

Of course, these are not really mangoes. However, apparently it's not just her family that calls green peppers "mangoes." It's a regional or historical quirk. For a few:

Oh that looks so tasty... here we call em "paprika"?

They are definitely called peppers here - capsicum and the stuffing looks like rice. Maybe the cheese is in the rice!

@maggiemae The cheese has been shredded. The stuffing mixture is just egg and shredded cheese.
