Today I attempted marmalade for the first time ever using an excess of limes from my trees, together with a few lemons and an orange. I have 9 bottles and it seems to have set well, but unfortunately some of the rind seems a little harder than it should be so it seems I need to cook it longer before adding the sugar. I think the lime skin was soft, but the lemon rind was somewhat thicker and tougher and I didn't take that into account
Looks splendid! You might like to try some of the lemon rind in boiling water, perhaps with some honey as a soothing drink for sore throats and/or because you like it! They all look delicious.
@365anne Thanks Anne. Yes it does taste pretty good. I had to try some on a slice of toast with my tea this afternoon! I don't think it is good enough for gifts due to some of the rinds being a little tough, but it will last me a good while without buying marmalade again for ages.

Although it is mostly limes (about 2/3 of the weight was very ripe limes so the the skin already yellow and only inside was green), I also added in 2 lemons I had, and 1 whole orange plus the outer skin of an orange that I kept the inside to eat fresh. I think the orange colour has dominated
@ludwigsdiana It is delicious. And although there seems to be a horrifying amount of sugar in the recipe, I used a little less sugar than the recipe called for, so the tartness of the lemon in there makes it less sweet than commercial marmalade I've had.
