Our Banff hotel did not offer breakfast facilities, and so we got into the habit of visiting “Cougar Pete’s”, the dining room at the adjacent International Hostel, open to non-residents, where a variety of substantial breakfasts, and excellent endless coffee, were available. We enjoyed the “quiet shift” between the energetic residents, already out in the snow with their boots or mountain bikes, and the more relaxed residents, still in bed. On this first morning we obviously found a table by the window, to plan the day whilst watching the moon head for bed over the snowy fir trees. I opted for French toast, with maple syrup, an option rarely available in the UK. I find that maple syrup has just the right degree of sweetness, but why, oh why, do you Canadians and Americans feel the need to add sprinkled icing sugar?

On another note, my husband loves French toast (wonder why it is called that!), no maple syrup, but LOTS of extra icing sugar that we always have to ask for on the side!
Wonderful capture. It was so nice waking up to this view. So Christmassy. Doesn't matter if we don't get snow here now this winter. Love that you got the moon too. Well shot hubby.
