You got the right idea with the high key. Sometimes it can just look like an over exposed shot, but sometimes the effect can be used to make a picture look more interesting. I like the way it made the landscape look, and the effect it had on your jeans.
As far as minimalism, in some ways it is, and some ways it isn't... but everyone has their own way of interpreting what exactly counts as minimalism. It is in the sense that you have a very simple background, and just one subject in the foreground, but it might not be because my eyes are drawn to more than one place in the picture: You and the horizon.
