My First Spatchcock Chicken!

Or "Butterflied", depending on where you're from...This may not seem like a big deal but it is to me because for the first time, I learned how to cut the backbone out of this bird and also break its breastbone. I kept saying, "I'm SO sorry!" But I did it per Ina Garten's (Barefoot Contessa) instructions. It was DROOLICIOUS! Love my cast iron skillet that belonged to my Poppa (Dad). Have to brag on myself so thanks for indulging me. "Skillet Roasted Lemon Chicken" by Ina Garten on Food Network. TRY IT!
Butterflying seems to be the way to get anything cooked evenly so good for you! Just don't try butterflying me! These cast iron skillets (mine is so old) are the best! Hi there Terry ----so nice to see a pic from you!
