Italian Opera Students Luncheon

That picture is on front of my video because I gave each of them a note and a 5 x 7 print as a memento of Lunenburg with our house in the photo. I took a lot of photos (no surprise there!) and was asked to send the pictures to them. To simplify things, I packed them into a video so they could share them with family and friends. I hope you'll enjoy sitting there with us for a few minutes; it was a pretty special afternoon!

Several of you asked for the Pear-Fruit crumble recipe...here it is:

Rhubarb* Pear Crumble from Jan J. *from the original recipe../..read on...

Heat oven to 400F 200C

TOPPING
200g / 7oz flour
200g / 7 oz cold butter diced
140g / 5 oz brown sugar
50g / 2 oz rolled oats
25g / 1 oz granola

Combined all above ingredients and work in butter with fingers until butter is incorporated and it is a crumbly consistence

FRUIT
3 ripe pears
600g / 1lb 5oz rhubarb
100g / 4 oz sugar
Zest and juice of one orange

Peel and core pears and cut into large chucks
Cut rhubarb into ¾” to 1” pieces
Mix pears, rhubarb, sugar, and zest and juice until well coated with sugar
Pour into baking pan
Bake at 400F for 35 to 40 minutes (I did 37 and it was excellent)

NOTE: When Rhubarb was out of season, we substituted fresh blueberries & omitted the white sugar.
When the fresh blueberries were gone, we've been using frozen mixed berries and/or frozen mango. (For all the fruit substitutes, exchange in equal measure with the rhubarb.)

The Maestro and several guests ate two helpings. I'd call that a hit and a success. Let me know if you try it and like it!
