At times when I don't want to cut up an onion, I take a bit of the greens for decoration or when I have goat cheese on rye bread. salt, pepper and a few slivers of the new growth.
I love your point of view on this, it makes a great interesting shot. I've got a pot of spring onions in water on my windowsill with about an inch of root. I'm going to plant them outside tomorrow if the rain holds off.
