Making mincemeat

I've been busy today, making mincemeat, apple cakes and leek and potato soup. This new mincemeat recipe seems a bit wet. Hope it absorbs all the liquid overnight. I've also been looking after Henry this afternoon. Out for dinner this evening so no more cooking!
