I've been experimenting with food while at home during this time. I also tried a month of mostly vegetarian food. These are my favorites.
Also, thank you to those who commented over the past few months on the photo of my father's hand. Grief is an interesting thing. Done in isolation has its benefits, but there does feel like something is missing too. Thanksgiving was a big day for my father and me, so I'll keep him by my side as we cook a giant Turkey for 3 people this year.

@jgpittenger the shrimp one is vegetable pho with pea shoots, bokchoi, herbs. I just had the veggie version of it tonight with mushrooms added too.
