Again. I keep making variations of these crackers and I love them! A little crunch is all I need--so flavorful too.
Recipe today:
1 cup cooked brown rice
1 cup cooked red quinoa (any color will do)
2 T water
1 T Soy Sauce
1 T Everything But the Bagel Seasoning
Next time, I am just gong to use a T of sesame or flax seeds (can take the heat a bit better).
All the ingredients go in a food processor, the mixture needs to feel like a paste when pressed together.
I make a small ball and then flatten it on a silicone baking sheet. They may get as big as about 2 in in diameter, possibly more.
I cook them in a 350-375 oven (fan) so it has to be watched. This batch was good to flip at 10 min. and then I went another 5. This part is really up to you and your oven and how thin you made the cracker!
But I tried to measure today (Junko! ;))
These are so yummy, and they definitely work better when quinoa and rice are in the mix vs. just rice.
@njmom3 It sure does! My only complaint is that the poppy seeds do not seem as heat tolerant and can turn sort of sour. Next week, I'll do it with sesame and flax seeds. Just trying to keep the points low for my WW diet. Ooof, some days, it's hard. Today was one of them! I gave away most of the crackers even though they are low in points. :)
