I have become obsessed with a curry paste from the grocery made by Kitchens of India. This one is Butter Chicken, but my other fav is Chicken Curry. They only have real ingredients, and no extra strange preservatives and stuff. Low in calories. The only negative is higher sodium.
Anyway, I cut up chicken thighs, put them in a pot, add one cup water, and the paste, and bring it to a boil, then cover and simmer 25 minutes. I add in potatoes, carrots sometimes. And then add fresh spinach at the end. It's sooooo yummy! I added a dolop of plain greek yogurt.
The paste is less than 2 dollars. Really helps when I'm time bound! And honestly, it's as good as my friend who does this by hand!
