1) The peppers and purple onion went into my main dish, a roasted vegetable tart, along with mushrooms, artichokes, and cheese.
2) Roasted potatoes and purple and white pearl onions with olive oil, fresh rosemary and thyme, pepper and paprika.
3) Caramelized yams, a yummy Martha Stewart recipe with fresh orange juice and orange zest. Only at a holiday would I put butter and brown sugar on a vegetable.
We ordered a traditional turkey dinner from Whole Foods for the non-vegetarian in the house.
