I started this tradition of carving persimmons into Jack-o-lanterns approximately 10 years ago when my middle child was in kindergarten. Typically, there are a lot snacks and goodies in the classroom at this time of the year. Since he has a lot of food allergies, I wanted a snack that every child will enjoy despite their food preferences and restrictions.
Ten years later, this tradition is still going strong in our family and it doesn’t look like we will be abandoning it any time soon. He still asks me to carve one for him when he sees me making one for his younger brother.
