So, today is the first Wednesday of the month, which means I had a women's meeting, followed by a small church service and dinner. My daughter sent me a recipe from her school cafeteria (that feed over 100 people) and another from a student from India and asked me to put it in a portion size that she can make. So, I bought a bunch of spices and toasted and ground them, cut up and marinated chicken in ginger and turmeric and made some yummy Indian butter chicken to test out on my friends at church. Well, they loved it. They at a whole big crockpot full of it (5 pounds of chicken cut up) and probably 5 of the 7 cups of jasmine lemon rice I made (that was the student's recipe because he said it was an "abomination" to use any rice but jasmine for this dish. The funny thing was, another lady made Indian Butter Chicken for tonight's dinner, too. What's the chances of that happening? I mean, sometimes we'll end up with 4 crock pots of macaroni and cheese, but Indian Butter Chicken? Good thing mine was spicy and hers wasn't, so we had everyone covered. I tried hers, it was good, too. And, I think a lot of it was eaten as well. Our church can consume some food at the First Wednesday dinner.
Sounds yummy- I love all the spices in the collage- I would love to smell them- I'm sure they smell wonderful. And yes, quite amazing that two of you made this dish- not the usual fare at church potlucks!
