I baked an apple pie for my father-in-law for Thanksgiving, froze it and boxed it up with some dry ice. I Sent it UPS to him. Should be there Wednesday. Most expensive apple pie I've ever made, but I wanted him to have something special since we weren't able to go there this year because of COVID-19.
Here's her recipe:
6 Golden Delicious apples
2 pie crusts (bottom and top)
2-3 TBS sugar
cinnamon
dash of salt
2 tbs butter cut into small pieces
about a tsp canned milk
Peel, core and slice apples (about 1/8 inch thick) and place in a bowl of cold water until ready to use.
Spray bottom of pie pan and place in bottom crust. Sprinkle about half the sugar and some cinnamon (lightly) into bottom of crust. Drain all the water off the apples and put them into the crust so they mound up above the edge of the pan. Sprinkle with rest of sugar, the salt and some more cinnamon and place the butter around the top. Put the top crust on. Crimp or roll the edges to hold in the juices. Cut a "C" in the top center to vent steam. Rub a little canned milk on top of crust to help it brown. Sprinkle with sugar. Bake on a baking sheet at 425 degrees for about 40 minutes (or until the juices start to bubble out). Check after 30 minutes - you might have to put a pie ring on to protect the edges from browning too much (or put some aluminum foil around the edges to protect them).
