A bit of baking in the afternoon always makes me happy, and using the Wilbur chocolates given to me by John and Nirali makes me even happier. This easy recipe makes a velvety cookie dough just perfect for rolling out and pressing with a cookie press, which creates a recessed center that can be filled with just about anything — in this case, Wilbur Buds! I love the slight crispness and versatility of this delicious, vanilla-laced cookie; and it seems I always have the ingredients on hand. It's one of my favorite cookie recipes!
Vanilla Cookies
9 tablespoons butter, softened
1/2 cup light brown sugar
2 teaspoons pure vanilla extract
1-1/2 cups flour
Filling, optional
With electric mixer, beat butter and sugar until light and creamy.
Add vanilla and beat until well mixed.
Add flour and beat until well mixed. (If dough is crumbly, knead together with hands.)
Roll out dough on baking mat and press with cookie press. (This dough is velvety smooth and not sticky, so no flour is needed for rolling out). Transfer cookies to parchment paper-lined cookie sheet.*
Bake at 375° for 10 minutes or until bottoms are lightly browned. (If filling center of each cookie with a chocolate, place a chocolate on each cookie upon removing cookies from oven; but if filling centers with jam, jelly, honey, etc., spoon filling into cooled cookies.)
Cool cookies on cookie sheet for 3 minutes. Transfer to wire rack to finish cooling.
*Dough does not have to be rolled out and pressed. Dough can simply be formed into balls and flattened with the bottom of a glass.
