With a couple of glasses of icewine, a snack, a cozy fire, and a Christmas tree glowing in the corner, we enjoyed our relaxing evening at home. We reminisced about our discovery of icewine on a trip to Canada over twenty years ago. In Niagra-on-the-Lake, we discovered the Inniskillin winery where we fell forever in love with icewine — "winter's gift to wine lovers." Harvesting the grapes when frozen during winter produces a concentrated juice with intensified flavors, and this super sweet specialty wine paired perfectly with every Christmas cookie on the plate!
