My Thanksgiving Dinner

I decided to buck the traditional Thanksgiving day turkey dinner. I knew it was going to be on the warm side and didn’t want the extra heat from the oven. So, I opted to do a roast beef in the crockpot. I popped in a few baby red potatoes some sliced onions and some carrots. I made a cooking sauce with beef broth, tomato paste, a little soy sauce, a touch of gravy Master and a dab of Worcestershire sauce. I cooked it in my crockpot or in my slow cooker for eight hours on low temperature.

It turned out excellent although the meat was a little overcooked but that’s OK it tasted good. I had steam some asparagus spears to go with my meal. I bought the pumpkin pie as I usually do on Thanksgiving and Christmas but this year’s pumpkin pie is a disaster.

I took a small slice took a bite of the pie and said eweeee this is not Pumpkin pie. I waited a few minutes and then I took another bite after that I decided no more or I would end up in a sugar coma before the night was over. I read the ingredients which I should’ve done before I bought the darn pie. it definitely had more in it than I put in my pumpkin pie including both sugar and corn syrup. No wonder iIt was so sweet. Plus there are a lot of things I can’t even pronounce and I won’t go there. Needless to say I won’t buy that pumpkin pie anymore may have to start making my own again or just going without because I don’t need that much pumpkin pie to eat.

Too bad are used to always look forward to my pumpkin pie on Christmas and Thanksgiving. I will have to try to start a new tradition I guess unless I can find the old pumpkin pie are used to get. Trouble is everybody’s trying to do everything cheaper and nothing taste the same anymore. Other then that the dinner itself was delicious. Plus I have enough leftover for another meal and a roast beef sandwich or two.

The dinner sounds delicious ! The beef , fresh veg. and perfect sauce . ! But when it comes to puds - home made are always best - when you make from scratch you know what's in it without unwanted additives and unnecessary sugars . If you have misplaced your usual recipe there are tons of variations on line to chose and make the most appealing for your taste ! Perhaps make a small one or a recipe you can make and freeze ( I do not know if a pumpkin Pie would freeze successfully !! .

@beryl I am afraid baking and cooking are gettin* beyond me. Every thing is getting so hard to do and tires me out completely.

Sounds like you went to a lot of bother for a lovely Thanksgiving lunch - hope you did enjoy it! Pity about the pumpkin pie but I fully understand about "bought" food - who knows what's inside many of them - and they juty don't taste nice! Hopefully you are invited out for Christmas lunch do you don't have to do anything but enjoy :)

@vignouse I think I knew what you meant without the explanation. I use to bake till I moved to Florida. Here it s too hot to cook. Today with the breathing problem I am lucky to make a meal and do the clean-up.

@janiskay I thought I read that your lungs were supposed to gradually improve - I'm sorry that isn't happening. I'm asthmatic so I know what shortness of breath is like - it must be 100 times worse for you.

@vignouse I wished they would improve. I actually pray for that. I have good days and bad days but unfortunately the bad days out weigh the good days. And the good days are nowhere near normal. So yes with your asthma you do know what I am going through.

I'm a bit like you - have gone to extreme lengths over the many years and now, all I say is: "I can't be bothered'! I think I've reached the age where that is acceptable. We don't eat pumpkin pie so don't even know how to make that! Picture above looks really good!

The meal sounds very good- I'm all for easy! You might want to check the bakery section of your supermarket or even local restaurants. Sometimes they bake fresh pies with less sugar- and some supermarkets even sell them in half pie sections. I know you can order pies from Perkins but I'm not sure if you have that chain by you. The recipe for pumpkin pie that I get off the pumpkin can is fairly easy. And I get the "fresh" pie crust not the frozen. But if you don't have the stamina it might be best to go without as you said. Anyhoo...! I'm glad you had a nice meal and enjoyed your day in spite of the overly sugared pie! Good collage!

The pie does not look right. I am making pies in graham cracker mini crusts for Jane and me to have tomorrow. Using pie filling. We are doing a turkey breast. Cold enough here to heat up the kitchen and not mind. Snow coming tomorrow night.
