Jane Pittenger's Sourdough Rye Bread, Attempt #3

Practice makes . . . well, improvement, right? I still don't have one of those fancy bread pans for making long breads like Jane @jgpittenger uses so I tried again with my Dutch Oven. I also used a too-wide bowl for when the bread was rising so I had to squeeze it into the Dutch Oven. But all in all, this was the best attempt. I ordered unhulled sesame seeds (from nuts.com) which were nice and crunchy. I heeded Hanna's @haskar 's childhood recollection of grandmother telling her to keep windows closed and not talk to it while it's rising. The bread rose well, and I remembered to put the seeds on the bottom as well as the top. (And I really didn't burn it -- the strange dark parts are shadows of the tree above.) I also incorporated J A Byrdlip's @byrdlip suggestion to put water underneath the bread and it did make the inside texture lighter, and the outside crispier. I'm eating too much butter these days with all this baking of bread to I used a nice quality olive oil from @domenicododaro 's wife, and added Dukkah to it. @taffy is also baking this bread and enjoying it very much. Try it -- it's a great recipe. After all, as you can see below, Krista @blueberry1222 has named this the "365 bread".

@ludwigsdiana Try your oven with the light on, that should give enough warmth for rising.

@byrdlip thanks for the tip, I tried that last time, but it only blows air as the thermo fan goes on and does not really get warm :-(

Practice does make perfect! It looks like a professional loaf -- very tasty looking with all the seeds and given the shape. YUM!

@ludwigsdiana -- I used a thermometer and walked around my house to find the warmest spot! (It turned out to be the attic room.). @byrdlip -- seems you have a lot of baking experience with bread!
@taffy -- the flour and seeds from nuts.com are great -- and do you recognize that this is the table I ordered from the place you recommended? I had to assemble it myself because it came in parts with a bag of mysterious metal things.

Now I'm really craving bread and I was supposed to make baguettes today and then I got food poisoning this morning. From fast food, which I have had a total of 2 times over the months. UGH! But this is lovely! I can imagine the crunch and the soft inside. Mmmmmmm

@blueberry1222 -- well then Jane @jgpittenger should share the recipe more widely so more people can bake it! @taffy has made this bread famous on Beaver Island as she has shared it with her friends and neighbors there.
