i noticed the tea bush was starting to bloom, it is a tiny camellia, with a lovely scent. . havent made any tea with it yet, doesnt sound too difficult, but lots of variables to the taste depending on how much you bruise the leaves, how long you leave them to ferment and how much heat is applied.
@brigette this is a tea bush as in tea tea, like in the packet, i didnt realise it is a relative of the camelia and has these flowers. .. . you are supposed to pick the new leaf tips, macerate it and leave it to oxidise for 2-3 days then cook it in a low oven to dry to make black tea, green tea is only fermented an hour or so and oolong style is somewhere in between .... so i read, will try it in spring, noiw that my bush is big enough for a trim.
