Super clarity on black. An incredibly important native grass - it could be our future, it certainly was the main source of flour here in the past. This grass will not grow with super phosphates, and is drought tolerant. It was highly prized once, and is being recognised again now. I have really come to value it after reading a book called Dark Emu (Bruce Pascoe), which tells the history of our country that has been hidden for a long time. Some wide thinking bakers are experimenting with using it now and discovering some incredible properties. I'm going to be really interested to watch what happens as climate change and soil degradation make farming GMO crops harder and harder to sustain.
