Eggs are really good for you...

I want to avoid flower photos when there is so much blooming in our garden. Then, what about a food shot!
Coddled eggs are so delicious done in these beautiful egg coddlers bought over the years.
Unfortunately although i usually put 2 eggs in each, these eggs came from the Farmer’s Market and were too big! They blew the screw tops off these hand painted china pots.!

Three Good Things
1. Although I allowed too much time for this recipe which also included cheese, mushroom, chopped chicken and parsley, next time I’ll have it right - got to have the eggs a bit drippy.
2. Got some new bath towels delivered - thick and fluffy - just right after they had been through the clothes washer and drier!
3. The picture is not perfect but I was in too much of a hurry to eat!
I've never had coddled eggs, your post makes me want to try them. Yummy looking food.

Lovely cups. I've never had coddled eggs before. How do you cook them?

@skstein You break the eggs into the cup and add whatever you want - cheese, mushroom, onion, cream, then screw the tops on and place in a simmering pan of water on a trivet. Then lightly simmer for 12 minutes or as in some recipes say, a rolling boil for 4 mins then turn the element off and allow the cups to sit for a further 7 minutes!

@ltodd They are very special, Lyn - have to be strong but the designs on the outside make them good to serve at the table. I have collected 6 of these, all different over the years.

@maggiemae they are lovely! and I forgot to say thankyou for always posting 3 good things - I always read them Maggiemae, and appreciate your thoughts and sometimes it is a jolt of perspective in our busy days. I had a tatty newspaper clipping of a survivor of the 2004 tsunami over my desk for ten years, reminding me visually every day that I should be thankful for even the worst of my days.

These sound and look quite nice. I have never had coddled eggs, they sound very English to me. It is nice though to have a proper breakfast.
