Our friend Doug (owner of yesterday's rooster) is an avid gardener. He regularly seeks out unusual plants. The cardoon, also called the artichoke thistle, is a thistle in the sunflower family. They are native to the Mediterranean region and their history as a vegetable dates back to the ancient Romans.
I'd rather have the flowers in a vase than go through the hassle of preparing the leaf stems for eating.
Fabulous shot Merrelyn! We have been eating them for many years and I have never seen a flower until a few days ago. My neighbour has some in her garden, which I forgot to post today ;-)
