See this a lot but had to look it up to find out its name - think this is Cowbane - the roots and leaves are poisonous and touching the flowers can cause a skin reaction. But it looks pretty in the fields.
@rontu Bear Grass - just looked it up as I wasn't familiar with it - seems to be thicker and have several layers to it. Cowbane reminds me more of Queen Anne's Lace with just more flower heads.
