Purple - Carrots

I found these purple carrots at the fruit and vegetable markets. I was expecting them to be orange inside but they were more like the colour of beetroot. I used them in a vegetable soup I made and when I blitzed it all up the whole soup turned this magnificent colour.

Sorry I am behind on commenting on your projects again. Our garage extension has commenced and we are also in the middle of purchasing a new care for my husband and life has been busy this week. It is a long weekend so hopefully I will get a few minutes in between taking the girls to birthday parties and having friends to sleep over to catch up.

I have never seen such, If you had not identified tham I would have assumed beets. Marvelous color

You've just reminded me that I cooked beetroots last week, but didn't get a photo of the colour. What a wasted opportunity! Love the colour of these carrots.
