This is a steal from a Gordon Ramsay recipe, and works perfectly alongside most fish and chicken, even on its own sprinkled with feta. Onion and garlic pan-fried in olive oil for a few minutes, then courgette (zucchini), peppers (capsicum) and cherry tomatoes added in sequence and tossed until slightly tender (at a fairly high heat so a little caramelisation occurs). Just before the finish, add a dash of balsemic vinegar (and, if you have available, some roughly chopped fresh basil or parsley). Simples!
