a piece of cake

My coffee and walnut Easter cake:

Into a bowl put:

3 ozs SR flour
1 level tsp baking powder
4 ozs caster sugar
4 ozs soft marge
2 ozs walnut pieces
1 oz porridge oats
2 eggs

Mix all together, put into a greased/lined 8inch sandwich tin, bake at 160C for 20-30 mins or until cooked

Coffee Fudge Icing
1 oz butter
3 rounded tsps instant coffee dissolved in a little hot water
Icing sugar

Decorate with walnut halves

It definitely affects mine (osteo-arthritis) although my GP was cynical (and rather rude I thought) when I told him. Quite a bit of info online.

Delicious Hazel! I have eaten cake too this Easter, unusual for me as I don't often indulge. I do eat sweet things but it tends to be chocolate for a treat!
