Pancakes Chinese Style

I love the whole ritual of preparing the pancake with dots of plum sauce, a sprinkling of sliced cucumbers and spring onions, adding the crispy duck; and then adding a little more plum sauce, rolling up the pancake and biting into the crunchy, sweetish mix. Yummy!
