Twice As Nice

Oh dear, I just happened to mention to Jake that it was National Chocolate Cake day. Then I had no option but to make a chocolate cake!
Increased the clarity across the top of the cake a tad but done nothing else to it.
Awarding myself 10 bokeh points,
and 10 extra points for the bokeh reflections ;-)

Recipe from Mary Berry's Ultimate Cake book:
1 and a half table spoons cocoa.
3 table spoons hot water.
6oz / 175g soft margarine - I use half butter half flora.
6oz / 175g caster sugar.
3 size 2 eggs.
6oz / 175g self-raising flour - I use an ounce of ground almonds in place of an ounce of the flour.
1 and a half tea spoons baking powder.

For the fudge icing:
2oz / 50g margarine (half butter half flora)
1oz / 25g cocoa
2 table spoons milk
8oz / 225g sifted icing sugar

To finish:
apricot/strawberry/any flavour you like/ jam
chocolate flake/ grated chocolate

Preheat oven 180C / 350F / gas 4.
Grease and line 2 x 7in sandwich tins.
Blend cocoa in a large bowl with hot water. Leave to cool.
Add remaining ingredients to bowl, beat throughly for 1-2 minutes.
Divide between the tins, bake for 25-30 mins.
Leave to cool on a wire rack.

I don't do it like that, I cream butter and sugar then add eggs then add the other stuff. Either way its a nice cake.

Icing: You will stick you fingers in it or eat it from the spoon!
Melt butter/margarine in a small pan, add the cocoa and cook, stirring, for 1 minute.
Remove from the heat and add milk and icing sugar.
Beat well until smooth.
Cool a little until of a spreading consistency.
Spread jam on surface of one cake, top with half the icing. Place remaining cake on top, brush with jam, add remaining icing.
Decorate with chocolate flakes / strawberries / things you like.

I only put jam in the middle.
The icing can be made in advance and left to cool, then just warmed a bit to make it flexible enough to pour out of the pan when you want it.
No one wants to wait for the cake in our house so I usually have to put the cakes in the fridge to get them cold enough to take the icing. Hot cake and hot icing is a whole another desert.

No calories in it at all, no, not one.

oh, I had no idea there even was a national chocolate cake day, though I suppose I should have known, there are national days for most things now! I might have a belated chocolate cake day treat this week!

Got to fave this. My friend loves Mary Berry and today said 'oh I forgot to bring you a slice of Tom's chocolate fudge cake birthday cake....' and I STILL haven't got it !!! This will do for now. Nom.
