there's a pancake thing that is coming up i think in february. our church used to have the pancake dinner where the girl guides would serve us pancakes. the first year i attended the event, i thought those young girls who were taking our orders were really cute, with their little note pads asking for our orders - how many? butter or margarine? what drink would you like with that, tea, coffee or chocolate? i bet some of them would use that little experience to take on serving jobs when they're old enough so they could save money for their college education. the young girl who served at our table was about ten, and when i gave her a tip of $5 (we had to pay $10 for the event), she was in a quandary as to what to do with it. she asked one of the elders and when she was told to keep it, she was quite happy.
now this year, as we can't have that even due to the pandemic, what we planned to do was to ask people for their favourite pancake recipe and also to make a donation to the church. i jumped the gun in my excitement and volunteered that i have a pancake recipe that is different from most. instead of milk, i use fresh apple juice. then of course, now i realize that i don't have a juicer and i don't know if any of those juice kiosks are even open these days as we are still on a complete lockdown. i feel awful, i just might triple my donation then.
these are ordinary blueberry pancakes, bought frozen from the grocery store. i used apple butter instead of maple syrup, and it tasted really good and delicious! for two years, the brand i always bought was not available anywhere. but last december, when i went to the st. lawrence market, i found that the store i always go to had them now again. i like this brand because it is more sweet (but not too sweet) with just the right amount of tang. the other apple butter in the market tastes more like chutney. so now i am a happy camper.
They certainly do look delicious - frozen or not!

I've been seeing a lot of photos of pancakes lately. I'm going to have to put them on the rotation. These look very tasty. I like apple butter on my pancakes and waffles and English muffins and biscuits and ... I even made a run of it one fall.
